Cook tender chicken and fluffy rice together in one pot with a creamy, flavorful coconut curry sauce for a simple weeknight dinner with minimal cleanup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 (13.5 ounce) can full-fat coconut milk
  • 2 cups chicken broth
  • 1 cup long-grain white rice, rinsed
  • 1 cup frozen peas
  • 1 tablespoon lime juice
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the chicken pieces and cook until lightly browned on all sides, about 4 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the pot and cook until softened, about 3 minutes.
  4. Add the garlic and ginger and cook for 1 minute until fragrant.
  5. Stir in the red curry paste and turmeric. Cook for 1 minute, stirring constantly.
  6. Pour in the coconut milk and chicken broth. Bring the mixture to a simmer.
  7. Add the rinsed rice to the pot, stirring once to combine. Return the browned chicken to the pot.
  8. Reduce the heat to low, cover the pot, and simmer for 18 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  9. Remove the pot from the heat. Stir in the frozen peas and lime juice. Cover and let stand for 5 minutes.
  10. Fluff the rice gently with a fork before serving. Season with salt and pepper as needed.

Notes

  • Rinsing the rice removes excess starch, which helps prevent the final dish from becoming too sticky.
  • If you prefer more spice, increase the amount of red curry paste slightly.
  • You can substitute chicken breasts for thighs, but adjust the cooking time slightly to prevent drying out.
