Make traditional Irish Potato Farls using leftover mashed potatoes. These pan-fried potato cakes are crispy outside and fluffy inside, perfect for breakfast.

Ingredients

Scale
  • 2 cups cold mashed potatoes (plain, no milk or cream added if possible)
  • 1 cup all-purpose flour
  • 2 tablespoons cold unsalted butter, cut into small pieces
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • Extra flour for dusting

Instructions

  1. In a large bowl, combine the cold mashed potatoes, flour, salt, and baking powder.
  2. Cut in the cold butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs.
  3. Gently bring the mixture together with your hands until a soft dough forms. Do not overwork the dough.
  4. Lightly dust a clean surface with flour. Turn the dough out onto the surface.
  5. Pat or lightly roll the dough into a circle about 1/2 inch thick.
  6. Cut the circle into four equal wedges (farls).
  7. Heat a dry griddle or heavy skillet over medium heat.
  8. Place the farls on the hot griddle. Cook for 5 to 7 minutes per side until they are golden brown and heated through.
  9. Serve immediately.

Notes

  • Using cold, leftover mashed potatoes gives the best texture for farls. If you must make fresh mash, use only potato, salt, and a little butter; avoid adding milk or cream.
  • For a crispier exterior, cook the farls slightly longer on medium-low heat.
  • These are excellent served with bacon, eggs, or a spread of butter and jam.
