Ingredients
Scale
4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese, plus more for topping
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
Set up your breading station: Place flour in one shallow dish. Whisk the eggs in a second shallow dish. In a third shallow dish, combine the panko breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper.
Take one pounded chicken cutlet and dredge it completely in the flour, shaking off any excess. Dip it into the egg mixture, letting the excess drip off. Finally, press the chicken firmly into the breadcrumb mixture until fully coated. Repeat with the remaining chicken.
Lightly brush both sides of each breaded cutlet with olive oil. Place the cutlets on the prepared baking sheet.
Bake for 15 minutes.
Remove the pan from the oven. Spoon about 3 tablespoons of marinara sauce over the top of each cutlet. Top each with slices of mozzarella cheese and a sprinkle of extra Parmesan cheese.
Return the pan to the oven and bake for another 5 to 8 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
Serve immediately over your favorite pasta for a complete Italian comfort food at home experience.
Notes
For extra crispy edges, you can briefly pan-fry the breaded cutlets in a skillet with 1 tablespoon of oil for 2 minutes per side before topping with sauce and cheese and moving them to the oven.
Use high-quality marinara sauce; since this recipe is simple, the sauce flavor really shines through.
If you prefer a thinner cutlet, you can slice the chicken breasts in half horizontally before pounding them.
