Ingredients
Scale
4 large eggs
1 cup all-purpose flour
1 cup whole milk
1/2 teaspoon salt
1/2 cup beef dripping or vegetable oil (for the tin)
Instructions
Combine the eggs, flour, and salt in a large bowl. Whisk until smooth.
Gradually whisk in the milk until you have a smooth, thin batter, similar in consistency to thin cream. Do not overmix; a few small lumps are acceptable.
Cover the bowl and let the batter rest in the refrigerator for at least 30 minutes, or up to several hours. This resting time helps achieve a better rise.
Preheat your oven to 450°F (230°C). Place a 12-hole muffin tin (or a roasting tin for larger puddings) into the oven.
Add about 1 teaspoon of beef dripping or oil into each cup of the hot tin. Heat the tin in the oven for 10 minutes until the fat is smoking hot. This step is crucial for a good rise.
Carefully remove the hot tin from the oven. Working quickly, pour the cold batter evenly into the hot fat, filling each cup about halfway.
Immediately place the tin back into the hot oven. Do not open the oven door for the first 15 minutes of baking.
Bake for 20 to 25 minutes, or until the puddings are well-risen, deep golden brown, and crisp.
Serve your fluffy Yorkshire puddings immediately with your roast dinner and gravy. Give yourself a high-five for that perfect puff!
Notes
For the best rise, make sure your batter is cold and your fat is smoking hot when you pour the batter in.
If you want individual Yorkshire puddings, use a standard 12-hole muffin tin.
