Create fun and healthy veggie sushi sandwich rolls for your kids’ lunchboxes. These rolls are easy to make and packed with colorful vegetables, offering a delightful alternative to traditional sandwiches.

Ingredients

Scale
  • 2 cups cooked sushi rice
  • 4 sheets nori (seaweed)
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup thinly sliced red bell pepper
  • 1/4 cup thinly sliced avocado
  • 2 tablespoons cream cheese or vegan cream cheese (optional)
  • Soy sauce or tamari for dipping

Instructions

  1. Prepare the sushi rice according to package directions. Let it cool slightly.
  2. Lay one sheet of nori on a bamboo sushi mat or a clean surface.
  3. Spread a thin, even layer of sushi rice over the nori, leaving a small border at the top.
  4. Arrange a line of your chosen vegetables (carrots, cucumber, bell pepper, avocado) across the rice, about one-third of the way up from the bottom. If using cream cheese, spread a thin layer over the vegetables.
  5. Roll the nori tightly, starting from the bottom edge with the fillings. Use the bamboo mat to help shape the roll.
  6. Repeat with the remaining nori sheets and fillings.
  7. Slice each roll into bite-sized pieces, about 1-inch thick.
  8. Serve with soy sauce or tamari for dipping.

Notes

  • Get your kids involved in chopping the vegetables or spreading the rice.
  • Experiment with different vegetable fillings like edamame, sweet potato, or pickled radish.
  • For a fun twist, cut the rolls into sandwich shapes before serving.
  • Ensure the rice is not too hot when you start rolling to avoid tearing the nori.
