Make a rich, creamy rice pudding using full-fat coconut milk. This recipe provides simple steps for a satisfying, dairy-free dessert.

Ingredients

Scale
  • 1 cup short-grain white rice
  • 1 (13.5 oz) can full-fat coconut milk
  • 2 cups water
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded unsweetened coconut (optional, for texture)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, water, sugar, and salt in a medium saucepan.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
  4. Reduce the heat to low once boiling, cover the saucepan partially (leaving a small gap for steam), and simmer for 40 to 50 minutes. Stir every 10 minutes, scraping the bottom of the pan.
  5. The pudding is ready when the rice is tender and the liquid has thickened considerably. If it becomes too thick before the rice is cooked, add a splash of water or plant milk.
  6. Remove from heat. Stir in the vanilla extract and shredded coconut, if using.
  7. Serve warm or chill completely for a firmer texture.

Notes

  • For extra creaminess, use only 1/2 cup of water and substitute the remaining 1 1/2 cups with unsweetened almond milk or soy milk.
  • Toppings like fresh mango slices or toasted pecans work well.
  • If you prefer a less intense coconut flavor, substitute half of the full-fat coconut milk with a neutral plant milk.
