Make a moist and tender Swedish Apple Cake, or Äppelkaka, using classic spices like cinnamon and cardamom. This rustic cake is simple to prepare and perfect served warm.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 4 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 1/4 cup milk
  • 2 tablespoons coarse sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or an 8×8 inch baking dish.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and cardamom.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  6. Spread half of the batter into the prepared pan.
  7. Arrange half of the apple slices evenly over the batter.
  8. Spread the remaining batter over the apples. Top with the remaining apple slices.
  9. Sprinkle the coarse sugar over the top layer of apples.
  10. Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.

Notes

  • For a richer flavor, use a mix of sweet and tart apples.
  • Serve this cake warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • You can substitute the milk with heavy cream for a slightly richer crumb.
