Ingredients
Scale
1 pound dried small red kidney beans, rinsed and picked over
1 pound smoked andouille sausage, sliced into 1/2-inch pieces
1 large onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 cloves garlic, minced
6 cups chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (or to taste)
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
4 cups cooked white rice, for serving
Instructions
Place the rinsed kidney beans, sausage, onion, bell pepper, celery, and garlic into the slow cooker.
Add the chicken broth, thyme, smoked paprika, cayenne pepper, bay leaf, salt, and black pepper to the slow cooker. Stir to combine all ingredients.
Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 3 to 4 hours.
Remove and discard the bay leaf. Stir the beans well. If the mixture is too thin, remove the lid and cook on high for the last 30 minutes to allow some liquid to evaporate.
Serve the red beans hot over cooked white rice.
Notes
For a richer flavor, substitute half of the chicken broth with water and add one smoked ham hock during the cooking process. Remove the hock before serving.
If you prefer a creamier texture, mash about 1 cup of the beans against the side of the slow cooker before serving.
Serve with sliced green onions or a dash of hot sauce for extra flavor.
