Make a rich, cheesy lasagna flavor in one skillet in under 30 minutes. This recipe reduces cleanup and effort while keeping the classic taste.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups water or low-sodium chicken broth
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large, deep skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
  2. Add onion to the skillet and cook until softened, about 4 minutes. Stir in garlic and cook for 1 minute more until fragrant.
  3. Pour in tomato sauce, diced tomatoes (with juice), basil, oregano, salt, and pepper. Stir to combine.
  4. Add water or broth and bring the mixture to a boil.
  5. Stir in the broken lasagna noodles. Reduce heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
  6. Remove the skillet from the heat. In a small bowl, mix the ricotta cheese and Parmesan cheese together.
  7. Dollop the ricotta mixture evenly over the top of the pasta. Sprinkle the mozzarella cheese over the top.
  8. Cover the skillet again and let it stand for 5 minutes to allow the cheese to melt and the ricotta to warm through. Serve directly from the skillet.

Notes

  • Use ground beef instead of Italian sausage for a different flavor profile.
  • If the sauce seems too thick before the pasta is done, add a splash more water or broth.
  • For extra richness, stir in 1/4 cup heavy cream with the ricotta mixture.
