A simple, quick recipe for baking cod fillets topped with a crispy Parmesan crust alongside tender roasted broccoli, all cooked on one sheet pan for easy cleanup.

Ingredients

Scale
  • 4 (6 ounce) cod fillets, about 1 inch thick
  • 1 pound broccoli florets
  • 2 tablespoons olive oil, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
  2. Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper directly on the prepared baking sheet. Spread the broccoli into an even layer.
  3. In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, dried parsley, salt, and pepper. Mix well.
  4. Pat the cod fillets dry with paper towels. Brush the tops of the cod fillets lightly with the remaining 1 tablespoon of olive oil.
  5. Press the Parmesan mixture firmly onto the top of each cod fillet to create an even crust.
  6. Place the crusted cod fillets on the baking sheet among the broccoli florets, leaving a little space between them.
  7. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the crust is golden brown. Cooking time depends on the thickness of your fillets.
  8. Remove the pan from the oven. Drizzle the baked cod with melted butter and fresh lemon juice before serving immediately with the roasted broccoli.

Notes

  • For an extra crispy crust, you can briefly place the pan under the broiler for the last 1-2 minutes, watching closely to prevent burning.
  • If you prefer a stronger garlic flavor, use 1/2 teaspoon of fresh minced garlic mixed into the crust instead of garlic powder.
  • This recipe works well with other firm white fish like haddock or tilapia.
