Ingredients
Scale
1.5 lbs salmon fillet
1 lb broccoli florets
1 red bell pepper, chopped
1/2 cup grated Parmesan cheese
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Lemon wedges, for serving (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a small bowl, whisk together olive oil, minced garlic, oregano, salt, and pepper.
Place the broccoli florets and chopped red bell pepper on the prepared baking sheet. Drizzle half of the olive oil mixture over the vegetables and toss to coat. Spread them in a single layer.
Pat the salmon fillet dry with paper towels. Place the salmon on the same baking sheet, alongside the vegetables.
Brush the remaining olive oil mixture over the salmon.
Sprinkle the grated Parmesan cheese evenly over the salmon.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp.
Serve hot, with lemon wedges if desired.
Notes
For crispier broccoli, you can roast the vegetables for 10 minutes before adding the salmon to the pan.
Feel free to substitute other vegetables like asparagus, zucchini, or cherry tomatoes.
Ensure the salmon is in a single layer to cook evenly.
