Ingredients
Scale
1 pound cremini mushrooms, stems removed
1 pound mild or hot Italian sausage, casings removed
4 ounces cream cheese, softened
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup breadcrumbs (optional, for topping)
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Preheat your oven to 375 degrees F. Lightly grease a baking sheet.
Wipe the mushroom caps clean with a damp cloth. Gently scoop out any remaining gills to create more space for the filling.
In a skillet over medium heat, cook the Italian sausage, breaking it up with a spoon, until fully browned. Drain off any excess grease.
In a medium bowl, combine the cooked sausage, softened cream cheese, Parmesan cheese, minced garlic, and chopped parsley. Mix well until everything is evenly incorporated. Season with salt and pepper.
Spoon the sausage mixture generously into each mushroom cap, mounding it slightly.
If using, sprinkle the tops evenly with breadcrumbs for a little extra crunch.
Arrange the stuffed mushrooms on the prepared baking sheet. Drizzle lightly with olive oil.
Bake for 20 to 25 minutes for medium caps, or 25 to 30 minutes for large caps, until the filling is hot and lightly browned.
Let them cool for a few minutes before serving. These make great holiday appetizer platters.
Notes
For a low-carb option, skip the breadcrumbs entirely. The filling holds together well on its own.
You can prepare these fully stuffed mushrooms up to 24 hours ahead. Cover them tightly and refrigerate. Add about 5-10 minutes to the baking time if baking directly from the refrigerator.
If you prefer using an air fryer, cook at 350 degrees F for 10 to 12 minutes, checking frequently.
These are excellent served warm but hold up well at room temperature for serving at potlucks.
