Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the pizza sauce, mozzarella cheese, and pepperoni slices.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Sprinkle the tops with the grated Parmesan cheese.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These cheesy pizza cupcakes freeze well. Cool them completely, then place them in a freezer-safe bag for up to one month. Thaw overnight or reheat briefly in the microwave.
  • If you want extra flavor, add a pinch of dried oregano or Italian seasoning to the dry ingredients.
  • For a different take, try using your favorite toppings like cooked sausage or chopped bell peppers in these mini pizza muffins.
