Ingredients
Scale
1 cup creamy peanut butter
1/2 cup granulated sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 1/2 cups mini pretzels, lightly crushed
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil (optional, for melting chocolate)
Flaky sea salt, for topping
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium microwave-safe bowl, combine the peanut butter, sugar, and softened butter. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and fully combined. This usually takes about 60 to 90 seconds total.
Stir the vanilla extract and the crushed pretzels into the peanut butter mixture until evenly coated.
Press this mixture firmly and evenly into the prepared baking pan. Place the pan in the freezer while you prepare the chocolate topping.
In a separate microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring until the chocolate is completely melted and smooth.
Pour the melted chocolate over the peanut butter layer in the pan. Spread the chocolate evenly using an offset spatula.
Immediately sprinkle the top generously with flaky sea salt.
Return the pan to the freezer for at least 1 hour, or until the bark is completely firm.
Lift the bark out of the pan using the parchment paper overhang. Break the bark into irregular pieces before serving.
Notes
For a gluten-free version, confirm your pretzels are certified gluten-free.
You can substitute semi-sweet chocolate with milk chocolate or white chocolate chips.
If you prefer a firmer fudge-like texture, reduce the microwave time for the peanut butter mixture slightly.
