Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 2/3 cup cold heavy cream
  • 1/4 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pecans or walnuts (optional)
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the heavy cream, pumpkin puree, egg, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  6. If using, gently fold in the chopped nuts.
  7. Turn the dough out onto a lightly floured surface. Pat it into a disc about 3/4-inch thick.
  8. Use a round biscuit cutter (about 2.5 inches) to cut out scones. You can also cut the disc into 6-8 wedges. Place the scones on the prepared baking sheet.
  9. Bake for 15-18 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. While the scones are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk or cream, and maple syrup until smooth. Add more liquid if needed to reach desired consistency.
  11. Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack. Drizzle the glaze over the warm scones.

Notes

  • Ensure your butter and cream are very cold for the best scone texture.
  • Don’t overmix the dough; this can result in tough scones.
  • You can add a pinch of pumpkin pie spice instead of individual spices.
  • Adjust the amount of liquid in the glaze to make it thicker or thinner.
