- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
- Orange food coloring
- Chocolate chips
- Whipped cream for topping (optional)
- Maple syrup for serving
- In a large bowl, sift together flour, baking powder, salt, and sugar.
- Make a well in the center and pour in the milk, egg, and melted butter. Mix until smooth.
- Stir in enough orange food coloring to achieve a vibrant pumpkin color.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- For each pancake, pour approximately 1/4 cup of batter onto the griddle.
- As bubbles appear on the surface, use a spatula to carefully flip the pancake.
- Cook for another minute or two until golden brown.
- Repeat with the remaining batter.
- Once cooked, arrange chocolate chips on the pancakes to create jack-o’-lantern faces – two for eyes, one for a nose, and a few for a mouth.
- Serve warm with whipped cream and maple syrup if desired.
Notes
- Adjust the amount of food coloring to reach your desired shade of orange.
- Ensure your griddle is at the right temperature to prevent burning.
- Get the kids involved in decorating the jack-o’-lantern faces!
