Make rich, creamy garlic butter shrimp scampi quickly using your Instant Pot. This recipe delivers tender shrimp in a flavorful sauce perfect for serving over pasta or rice.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the shrimp dry and season lightly with salt and pepper. Set aside.
  2. Set the Instant Pot to Sauté mode. Add olive oil and 2 tablespoons of butter. When the butter melts, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  3. Pour in the white wine or broth, scraping up any browned bits from the bottom of the pot. Let this simmer for 1 minute.
  4. Add the seasoned shrimp to the pot in a single layer if possible. Do not stir.
  5. Secure the lid and set the vent to sealing. Cook on High Pressure for 1 minute.
  6. Once the cooking time is complete, perform a Quick Release (QR) of the pressure.
  7. Open the lid carefully. Remove the shrimp to a bowl and set aside.
  8. Set the Instant Pot back to Sauté mode (Low). Stir in the remaining 2 tablespoons of butter, heavy cream, and Parmesan cheese. Stir until the sauce thickens slightly, about 2 minutes.
  9. Stir in the lemon juice. Taste and adjust salt and pepper if needed.
  10. Return the cooked shrimp to the pot. Stir to coat the shrimp in the sauce. Cook for 1 minute until the shrimp are heated through.
  11. Stir in the fresh parsley. Serve immediately over your choice of pasta or rice.

Notes

  • If you do not have white wine, use chicken broth for the liquid base.
  • For a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during step 8 before adding the shrimp back.
  • You can use frozen shrimp, but thaw and pat them very dry before seasoning.
