Ingredients
Scale
1 cup (2 sticks) unsalted butter
1 cup unsweetened cocoa powder
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup hot chocolate mix (powdered)
1 cup mini marshmallows
1/2 cup semi-sweet chocolate chips for topping
Instructions
Preheat your oven to 350 degrees F. Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
In a large saucepan over low heat, melt the butter. Remove from heat and whisk in the cocoa powder until smooth.
Stir the sugar into the cocoa mixture. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in the hot chocolate mix powder until it is mostly incorporated into the batter.
Spread half of the batter into the prepared pan. Sprinkle half of the mini marshmallows evenly over the batter. Top with the remaining batter.
Scatter the remaining marshmallows over the top layer of batter.
Bake for 25 to 30 minutes. The edges should look set, but the center should still be slightly soft for fudginess.
Remove the pan from the oven. Immediately sprinkle the chocolate chips over the top. Let stand for 5 minutes until the chips soften.
Use a knife to gently swirl the melted chocolate and marshmallows together slightly for a marbled effect.
Let the brownies cool completely in the pan before lifting out using the parchment paper overhang and cutting into squares.
Notes
For a toasted marshmallow look, place the pan under the broiler for 30 to 60 seconds after baking, watching closely to prevent burning.
Use high-quality cocoa powder for the best chocolate flavor.
Cool the brownies completely before cutting to achieve the fudgiest texture.
