Follow this recipe to make chicken wings that are both crispy on the outside and coated in a thick, sticky, sweet, and spicy honey sriracha glaze.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes)
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup Sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon grated fresh ginger

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
  3. In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack. Do not let them touch.
  5. Bake for 25 minutes. Flip the wings and bake for another 15-20 minutes, or until the skin is golden brown and crispy.
  6. While the wings bake, prepare the sauce. In a small saucepan, combine honey, Sriracha, soy sauce, rice vinegar, garlic powder, and ginger.
  7. Bring the sauce mixture to a simmer over medium heat. Cook for 3-5 minutes, stirring often, until the sauce thickens slightly and coats the back of a spoon. Remove from heat.
  8. Once the wings are fully cooked and crispy, transfer them to a large, clean bowl.
  9. Pour about two-thirds of the sauce over the hot wings. Toss quickly to coat every wing evenly.
  10. Serve immediately with the remaining sauce on the side for dipping.

Notes

  • For air fryer wings, cook at 380°F (195°C) for 18-20 minutes, shaking the basket halfway through. Toss with sauce after cooking.
  • If you prefer a thicker glaze, simmer the sauce longer until it reduces significantly.
  • To maximize crispness, ensure the wings are completely dry before seasoning with baking powder.
