Ingredients
Scale
1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 cup broccoli florets
1 red bell pepper, sliced
1 cup sliced carrots
1/4 cup soy sauce (low sodium preferred)
3 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon cornstarch
2 tablespoons water
Instructions
Combine the soy sauce, honey, rice vinegar, ginger, and garlic in a small bowl. Set aside.
Mix the cornstarch and water in a separate small bowl to create a slurry. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
Add the broccoli, bell pepper, and carrots to the same skillet. Cook, stirring occasionally, for 5 minutes until the vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables.
Pour the reserved honey soy sauce mixture over the chicken and vegetables. Bring the sauce to a simmer.
Stir the cornstarch slurry and pour it into the simmering sauce. Cook, stirring constantly, for 1 to 2 minutes until the sauce thickens into a glaze.
Serve immediately over rice or noodles.
Notes
For extra flavor, add 1/2 teaspoon of sesame oil at the end of cooking.
You can substitute the vegetables with snap peas, mushrooms, or sliced onions.
If you prefer a spicier dish, add 1/4 teaspoon of red pepper flakes with the garlic.
