Make this fast honey soy chicken bowl for a simple weeknight dinner. This recipe uses a sticky glaze and cooks quickly.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cooked white rice
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • 1 green onion, sliced, for garnish

Instructions

  1. Mix the soy sauce, honey, rice vinegar, and ginger in a small bowl to create the sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the broccoli florets to the same skillet. Cook for 3 minutes until slightly tender-crisp. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Return the cooked chicken to the skillet. Pour the prepared honey soy sauce mixture over the chicken and broccoli. Bring the sauce to a simmer.
  5. Stir the cornstarch slurry and pour it into the simmering sauce. Stir constantly until the sauce thickens into a glaze, about 1 minute.
  6. Divide the cooked rice between two bowls. Top the rice with the honey soy chicken and broccoli mixture. Garnish with sliced green onion before serving.

Notes

  • You can substitute brown rice or quinoa for white rice.
  • For extra flavor, add a pinch of red pepper flakes to the sauce mixture.
  • Cook the chicken in batches if your skillet is crowded to ensure proper browning.
