This recipe provides simple steps for making juicy, flavorful chicken thighs coated in a sweet and tangy honey mustard glaze, cooked perfectly in the oven.

Ingredients

Scale
  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, garlic powder, salt, and pepper to create the glaze.
  3. Pat the chicken thighs dry with paper towels. This helps the skin crisp.
  4. Place the chicken thighs skin-side up on the prepared baking sheet.
  5. Brush about half of the honey mustard glaze evenly over the chicken thighs.
  6. Roast for 25 minutes.
  7. Remove the pan from the oven and brush the remaining glaze over the chicken.
  8. Return the chicken to the oven and roast for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the glaze is caramelized.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • To prevent the honey glaze from burning, watch the chicken closely during the last 10 minutes of cooking. If the glaze darkens too quickly, reduce the oven temperature to 375 degrees Fahrenheit for the final roasting time.
  • Serve these chicken thighs with roasted potatoes or a simple green salad for a complete meal.
