Ingredients
Scale
1.5 lbs salmon fillet, skin removed and cut into 1-inch cubes
2 tablespoons olive oil
1/4 cup honey
3 tablespoons low-sodium soy sauce
4 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Optional: Sesame seeds for garnish
Optional: Chopped green onions for garnish
Instructions
Pat the salmon cubes dry with paper towels. This helps achieve better searing.
In a small bowl, whisk together the honey, soy sauce, minced garlic, ginger, and black pepper to create the glaze.
Heat the olive oil in a large non-stick skillet over medium-high heat.
Add the salmon cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the salmon for 2-3 minutes per side until lightly browned.
Pour the honey garlic glaze over the salmon in the skillet. Let it bubble for about 1 minute.
Stir the cornstarch slurry well and pour it into the skillet. Stir constantly as the sauce thickens quickly, about 1 minute, coating the salmon pieces.
Continue cooking for another 1-2 minutes, turning the bites gently until the edges are sticky and caramelized.
Remove from heat. Garnish with sesame seeds and green onions if desired. Serve immediately.
Notes
For crispier edges, you can bake the salmon cubes at 400°F (200°C) for 8 minutes before tossing them in the thickened sauce and briefly returning them to the pan for glazing.
You can substitute maple syrup for honey for a slightly different sweetness profile.
If you prefer an air fryer method, cook the seasoned salmon cubes at 380°F (195°C) for 8-10 minutes, then toss with the thickened glaze.
