Ingredients
Scale
6 bone-in, skin-on chicken thighs
1/2 cup honey
1/4 cup low sodium soy sauce
4 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried ginger (optional)
1/2 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easier cleanup.
Pat the chicken thighs dry using paper towels. This helps the skin crisp. Place the thighs on the prepared baking sheet.
In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, dried ginger (if using), and black pepper to create the glaze.
Brush about two-thirds of the honey garlic glaze evenly over the chicken thighs, coating both sides.
Bake the chicken for 25 minutes.
While the chicken bakes, prepare the thickener. In a very small bowl, whisk the cornstarch and water until smooth to create a slurry.
After 25 minutes, remove the chicken from the oven. Brush the remaining one-third of the raw glaze over the chicken.
Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is sticky and caramelized. Watch closely during the last few minutes to prevent burning.
Remove the chicken from the oven. Brush the cornstarch slurry over the hot chicken thighs. The residual heat will thicken the sauce slightly. Let the chicken rest for 5 minutes before serving.
Notes
For extra crisp skin, place a wire rack on top of the foil-lined baking sheet before placing the chicken on it.
If you prefer boneless, skinless thighs, reduce the total baking time by 5 to 8 minutes.
Serve with steamed broccoli or white rice to soak up extra sauce.
