Prepare tender chicken bites coated in a sticky, sweet, and savory honey garlic sauce, served over steamed rice for a complete weeknight meal.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 cup uncooked white rice (jasmine or long-grain)
  • 1.5 cups water (for rice)
  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh ginger
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • 1 tablespoon vegetable oil (for cooking chicken)
  • Optional garnish: 1 green onion, sliced; 1 teaspoon sesame seeds

Instructions

  1. Cook the rice: Combine rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed. Remove from heat and let stand, covered, for 5 minutes before fluffing.
  2. Prepare the sauce: In a small bowl, whisk together the honey, soy sauce, rice vinegar, ginger, minced garlic, and sesame oil. Set aside.
  3. Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes. Do not overcrowd the pan; cook in batches if necessary.
  4. Thicken the sauce: Pour the prepared honey garlic sauce mixture into the skillet with the cooked chicken. Bring the sauce to a simmer.
  5. Stir in the cornstarch slurry. Cook, stirring constantly, for about 1 minute until the sauce thickens and coats the chicken pieces well.
  6. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the honey garlic chicken bites.
  7. Garnish with sliced green onion and sesame seeds, if desired. Serve immediately.

Notes

  • For crispier chicken, lightly dust the raw chicken pieces with 1 tablespoon of cornstarch before pan-frying.
  • You can substitute brown rice for white rice; adjust cooking time as needed.
  • If you prefer an air-fried version, cook the coated chicken at 380F (195C) for 10-12 minutes, tossing halfway, before adding the sauce.
