Make this easy, flavorful one-pan meal featuring chicken pieces and potatoes coated in a sweet and savory honey BBQ glaze, baked until tender.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 1.5 lbs small potatoes (like Yukon Gold or red potatoes), quartered
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup your favorite bottled honey BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the quartered potatoes with olive oil, salt, pepper, and garlic powder until evenly coated. Spread the potatoes in a single layer on the prepared baking sheet.
  3. Roast the potatoes alone for 15 minutes to give them a head start on cooking.
  4. While the potatoes roast, prepare the glaze. In a small bowl, whisk together the honey BBQ sauce, apple cider vinegar, Dijon mustard, and smoked paprika.
  5. Remove the baking sheet from the oven. Push the potatoes to one side of the sheet. Add the chicken pieces to the empty side of the sheet.
  6. Brush half of the prepared BBQ glaze mixture over the chicken pieces.
  7. Return the sheet pan to the oven and bake for another 15 minutes.
  8. Remove the pan again. Brush the remaining glaze over both the chicken and the potatoes. Toss the potatoes slightly to coat them in the sauce.
  9. Bake for a final 5 to 10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the potatoes are tender.
  10. Serve immediately directly from the pan.

Notes

  • For crispier potatoes, cut them smaller or roast them for 20 minutes before adding the chicken.
  • If you use chicken breasts, cut them into uniform pieces so they cook evenly with the potatoes.
  • You can add 1/2 cup of sliced red onion or bell pepper during the last 10 minutes of baking for extra vegetables.
