Ingredients
Scale
1 cup whole wheat flour
1 scoop vanilla or unflavored protein powder
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg
1 cup milk (dairy or non-dairy)
1/4 cup plain Greek yogurt
1 tablespoon maple syrup (optional)
1 teaspoon vanilla extract
Cooking spray or oil for the waffle iron
Instructions
Heat your waffle iron according to the manufacturer’s directions and lightly grease the plates.
In a large bowl, whisk together the flour, protein powder, baking powder, cinnamon, and salt.
In a separate bowl, whisk the egg, milk, Greek yogurt, maple syrup (if using), and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
Pour the batter onto the hot waffle iron. Cook according to your iron’s instructions until golden brown and crisp.
Serve immediately with your favorite toppings. Give yourself a high-five for making a healthy breakfast!
Notes
For a gluten-free option, substitute the whole wheat flour with a 1:1 gluten-free baking blend. This keeps the recipe high protein gluten free waffles friendly.
If you want lower carbs, substitute half the flour with almond flour. This helps create low carb waffles.
For extra flavor, add 1/4 cup of mashed banana to the wet ingredients.
These waffles freeze well. Toast them straight from the freezer for a quick protein packed breakfast idea.
