Make these simple, elegant bites featuring warm goat cheese wrapped in flaky puff pastry, topped with honey and toasted nuts.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 oz soft goat cheese (chèvre)
  • 2 tablespoons honey
  • 1 tablespoon chopped pecans or walnuts
  • 1 egg, beaten (for egg wash)
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet.
  3. Cut the pastry sheet into 9 equal squares.
  4. Cut each square in half to create 18 small rectangles.
  5. Place about 1 teaspoon of goat cheese in the center of 9 of the rectangles.
  6. Brush the edges of these 9 rectangles lightly with the beaten egg wash.
  7. Top each with one of the remaining 9 pastry pieces, pressing the edges firmly to seal the cheese inside, forming small pillows. Crimp the edges with a fork to secure.
  8. Place the sealed bites on the prepared baking sheet. Brush the tops lightly with the remaining egg wash.
  9. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
  10. While the bites bake, lightly toast the chopped nuts in a dry skillet over medium heat for 2 to 3 minutes until fragrant. Set aside.
  11. Remove the baked bites from the oven. Immediately drizzle each warm bite with a small amount of honey and sprinkle with toasted nuts and a tiny pinch of salt.
  12. Serve warm.

Notes

  • If you prefer a different texture, substitute crackers or crostini for the puff pastry and serve the baked cheese as a dip.
  • Thyme leaves pair well with the goat cheese and honey; add a few leaves before baking for extra flavor.
  • For a cleaner drizzle, warm the honey slightly in the microwave before serving.
