Make fluffy, savory biscuits using gluten-free flour, sharp cheddar cheese, and fresh garlic flavor.

Ingredients

Scale
  • 2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 1 cup sharp cheddar cheese, shredded
  • 3/4 cup cold milk (dairy or non-dairy)
  • 1 tablespoon minced fresh garlic
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, salt, garlic powder, and black pepper.
  3. Cut the cold butter into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and minced fresh garlic until evenly distributed.
  5. Make a well in the center and pour in the cold milk all at once. Mix gently with a fork until just combined. Do not overmix; the dough will be shaggy.
  6. Drop the dough by rounded tablespoons onto the prepared baking sheet, forming rough mounds. For taller biscuits, you can pat the dough together slightly.
  7. Brush the tops of the biscuits lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the tops are golden brown and the biscuits are cooked through.
  9. Remove from the oven and serve warm.

Notes

  • Use a gluten-free flour blend that contains xanthan gum for the best structure. If your blend does not include it, add 1 teaspoon of xanthan gum to the dry ingredients.
  • Keep all ingredients, especially the butter and milk, very cold to help the biscuits rise properly.
  • For a stronger garlic flavor, you can substitute 1/2 teaspoon of garlic powder with 1 teaspoon of roasted garlic puree mixed into the wet ingredients.
