Cook a restaurant-quality steak seasoned with garlic butter and top it with a rich, homemade creamy mushroom sauce.

Ingredients

Scale
  • 2 (8 ounce) ribeye or New York strip steaks, about 1.5 inches thick
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup dry red wine or beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the steaks dry with paper towels and season both sides evenly with salt and pepper.
  2. Heat the olive oil and 1 tablespoon of butter in a heavy, oven-safe skillet (cast iron works well) over medium-high heat until shimmering.
  3. Sear the steaks for 3 to 4 minutes per side until a deep brown crust forms.
  4. Reduce the heat to medium-low. Add the remaining 3 tablespoons of butter, minced garlic, and thyme to the skillet.
  5. As the butter melts, tilt the pan and use a spoon to baste the steaks continuously with the garlic butter mixture for 1 to 2 minutes.
  6. For medium-rare, cook until an internal temperature of 130°F is reached. Remove the steaks from the skillet and place them on a cutting board to rest for 10 minutes.
  7. Return the skillet to medium heat. Add the sliced mushrooms to the remaining pan drippings and cook until they release their moisture and brown, about 5 to 7 minutes.
  8. Pour in the red wine or beef broth to deglaze the pan, scraping up any browned bits from the bottom. Let the liquid reduce by half.
  9. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook until the sauce thickens slightly, about 3 minutes.
  10. Remove the skillet from the heat and stir in the Parmesan cheese until the sauce is smooth. Taste and adjust salt and pepper if needed.
  11. Slice the rested steaks against the grain and serve immediately topped with the creamy mushroom sauce.

Notes

  • For best results, let your steaks sit at room temperature for 30 minutes before cooking.
  • Use a meat thermometer to check for accurate doneness.
  • If you prefer a thicker sauce, simmer it for a few extra minutes or add a small slurry of cornstarch mixed with water.
