Ingredients
Scale
1.5 lb sirloin steak, cut into 1-inch cubes
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon salt
0.5 teaspoon black pepper
For the Chimichurri Sauce:
1 cup fresh parsley, packed
0.5 cup fresh cilantro, packed
3 cloves garlic
0.5 cup olive oil
2 tablespoons red wine vinegar
0.5 teaspoon dried oregano
0.25 teaspoon red pepper flakes
0.5 teaspoon salt
Instructions
Prepare the chimichurri sauce first: Combine parsley, cilantro, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, and salt in a food processor. Pulse until the sauce is finely chopped but still has texture. Set aside.
Pat the steak cubes dry with paper towels. Season the steak cubes evenly with 1 teaspoon salt and 0.5 teaspoon pepper.
Heat 2 tablespoons of olive oil in a large, heavy-bottomed skillet over medium-high heat until shimmering.
Add half of the steak cubes to the hot skillet, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until browned on all surfaces. Remove the first batch and set aside.
Repeat the searing process with the remaining steak cubes. Remove them from the pan.
Reduce the heat to medium-low. Add the 4 tablespoons of butter to the skillet. Once melted, add the 4 minced garlic cloves. Cook for about 1 minute until fragrant, stirring constantly. Do not let the garlic burn.
Return all the seared steak bites to the skillet. Toss them quickly in the garlic butter for about 30 seconds to coat.
Remove the skillet from the heat immediately.
Serve the garlic butter steak bites hot, topped with a generous spoonful of the fresh parsley chimichurri sauce.
Notes
Use sirloin or ribeye for the best results in texture and flavor.
For extra tender bites, let the seasoned steak rest at room temperature for 15 minutes before searing.
Do not overcook the steak; the goal is medium-rare to medium for tenderness.
