Ingredients
Scale
1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
0.5 teaspoon black pepper
6 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 tablespoon fresh parsley, chopped
Instructions
Pat the steak cubes completely dry using paper towels. Season evenly with salt and pepper. Dryness helps achieve crispy edges.
Heat the olive oil in a large cast iron skillet over medium-high heat until shimmering.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the steak for 2-3 minutes per side without moving them until a deep brown crust forms. This creates the crispy edges. Remove the seared steak from the skillet and set aside.
Reduce the heat to medium-low. Add the butter to the same skillet.
Once the butter melts, add the minced garlic and Italian seasoning. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
Return the steak bites to the skillet. Toss quickly to coat the steak in the garlic butter sauce. Cook for 1 minute more.
Remove the skillet from the heat. Stir in the fresh parsley. Serve immediately.
Notes
For the crispiest edges, ensure your steak is very cold or at least completely dry before it hits the hot pan.
Use a heavy-bottomed pan, like cast iron, for the best heat retention and searing power.
Do not move the steak pieces while they are searing on the first side; let the crust develop fully.
