A quick recipe for tender garlic butter shrimp served alongside fluffy rice and mixed vegetables for a complete weeknight meal.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup mixed vegetables (broccoli florets, sliced carrots, snap peas)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the rice: Combine rice and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Keep covered off heat.
  2. Prepare the vegetables: Steam or lightly sauté the mixed vegetables until tender-crisp. Set aside.
  3. Season the shrimp: Pat the shrimp dry. Season lightly with salt and pepper.
  4. Make the sauce base: Melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Cook for 1 minute until fragrant, do not let the garlic brown.
  5. Deglaze: Pour in the white wine or broth and let it simmer for 1 minute, scraping up any bits from the bottom of the pan.
  6. Cook the shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until pink and opaque. Do not overcook.
  7. Finish the sauce: Remove the skillet from the heat. Stir in the remaining 2 tablespoons of butter and the lemon juice until the butter melts and forms a light sauce.
  8. Combine: Gently toss the cooked shrimp with the vegetables.
  9. Serve: Spoon the rice onto plates. Top with the garlic butter shrimp and vegetables. Drizzle any remaining sauce over the dish. Garnish with fresh parsley.

Notes

  • For perfectly tender shrimp, cook them just until they curl into a C shape. If they form an O shape, they are likely overcooked.
  • Use chicken broth instead of water when cooking rice for added flavor.
  • If you prefer a richer sauce, whisk in 1 teaspoon of cold butter at the very end off the heat.
