Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dry white wine or chicken broth
1/2 cup heavy cream
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley, chopped
Instructions
Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Place the salmon skin-side down (if applicable) and sear for 4 minutes until the skin is crisp.
Flip the salmon fillets. Reduce the heat to medium. Add the butter and minced garlic to the skillet. Baste the salmon with the melted garlic butter for 2 to 3 minutes, until the salmon is nearly cooked through. Remove the salmon from the skillet and set aside on a plate.
Pour the white wine or broth into the skillet. Scrape up any browned bits from the bottom of the pan. Let the liquid reduce by half, about 1 minute.
Stir in the heavy cream, lemon juice, and lemon zest. Bring the sauce to a gentle simmer and cook for 2 to 3 minutes, stirring occasionally, until the sauce thickens slightly. Do not boil rapidly.
Return the salmon to the skillet and spoon the sauce over the fillets. Cook for 1 more minute to reheat the fish.
Remove from heat. Sprinkle with fresh parsley before serving immediately over the sauce.
Notes
For a lighter sauce, substitute half-and-half for heavy cream, but the sauce will be thinner.
Serve this salmon with steamed asparagus or roasted potatoes for a complete meal.
If you do not have fresh parsley, you can omit it or use dried herbs sparingly.
