Ingredients
Scale
1 cup granulated sugar
1 cup packed light brown sugar
1 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour
1/2 cup powdered sugar, for rolling
1/2 cup granulated sugar, for coating
Instructions
Combine the granulated sugar, brown sugar, and softened butter in a large bowl. Beat with an electric mixer until light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the flour until a thick dough forms.
Place the powdered sugar in one shallow dish and the granulated sugar in another.
Scoop the dough into balls, about 1.5 tablespoons each. Roll each ball first in the granulated sugar, coating completely.
Next, roll the sugared dough ball thoroughly in the powdered sugar until it is heavily coated. This heavy coating helps create the crackle.
Place the coated dough balls about 2 inches apart on baking sheets lined with parchment paper.
Bake at 350°F (175°C) for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The crackle pattern will become more defined as they cool.
Notes
For the best crackle effect, chill the dough for at least 2 hours before rolling and baking.
If you want a fudgier center, slightly underbake the cookies by 1 minute.
Use high-quality cocoa powder for a richer chocolate flavor.
