Ingredients
Scale
4 ounces high-quality dark chocolate (70% cacao recommended), finely chopped
1 cup whole milk
1 cup heavy cream
2 tablespoons granulated sugar (adjust to taste)
1/4 teaspoon pure vanilla extract
Pinch of salt
Instructions
Place the chopped dark chocolate in a medium saucepan.
Add the whole milk and heavy cream to the saucepan.
Heat the mixture over medium-low heat, stirring constantly with a whisk until the chocolate is completely melted and the mixture is smooth. Do not let it boil.
Once melted, stir in the sugar, vanilla extract, and salt. Continue heating gently until the mixture is hot throughout, about 3 to 5 minutes.
Whisk vigorously for 30 seconds just before serving to create a slight froth.
Pour immediately into mugs and serve hot.
Notes
For an extra thick texture, simmer the mixture gently for 2 minutes after the chocolate melts, stirring often.
Use chocolate with at least 60% cacao content for the best flavor and texture.
You can substitute half the milk with strong brewed coffee for a mocha variation.
