Instructions
Whisk eggs, milk, salt, and pepper in a bowl.
Pour egg mixture into a greased 9×13 inch baking dish.
Bake at 350°F (175°C) for 15-20 minutes, or until set.
Once cooked, cut the egg mixture into 8 equal squares.
Toast 4 slices of bread.
Place one slice of cheese, one cooked egg square, and one slice of breakfast meat on each of the 4 toasted bread slices.
Top with the remaining 4 slices of bread and the remaining 4 slices of cheese.
Wrap each sandwich individually in plastic wrap or parchment paper, then place in a freezer-safe bag or container.
Freeze for up to 1 month.
To reheat, remove from wrapping and microwave for 1-2 minutes, or until heated through. You can also toast them in a toaster oven or skillet.
Notes
Feel free to customize with your favorite cheeses and breakfast meats.
For a healthier option, use whole wheat bread and turkey bacon.
You can also add a thin layer of your favorite condiment like mustard or ketchup before assembling.
