- 1 ripe avocado
- 1/4 cup fresh lime juice
- 1/4 cup water (add more for thinner consistency)
- 1/4 cup fresh cilantro leaves
- 1 clove garlic
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Place the avocado flesh, lime juice, water, cilantro, garlic, olive oil, salt, and pepper into a blender or food processor.
- Blend on high speed until the mixture is completely smooth and creamy.
- If the dressing is too thick, add water, one tablespoon at a time, until you reach your desired pouring consistency.
- Taste and adjust salt or lime juice as needed.
- Serve immediately or store in the refrigerator.
Notes
- For a spicier dressing, add a small piece of jalapeƱo without seeds.
- If you do not have a blender, you can mash the avocado very well and vigorously whisk in the remaining ingredients until smooth.
- This dressing thickens slightly when chilled; add a splash of water when reheating if necessary.
