Make soft, chewy, restaurant-style garlic naan bread at home using only a skillet. This recipe uses yogurt for tenderness and requires no special tandoor oven.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon instant dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup plain yogurt, full fat
  • 1/2 cup warm water (about 105-115°F)
  • 2 tablespoons melted butter, plus more for brushing
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large bowl, mix the flour, yeast, sugar, and salt.
  2. Add the yogurt and warm water to the dry ingredients. Mix until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 5 to 7 minutes until the dough is smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  5. Gently punch down the risen dough and divide it into 6 equal pieces. Roll each piece into an oval shape, about 1/8 inch thick.
  6. In a small bowl, mix the 2 tablespoons of melted butter with the minced garlic and chopped cilantro. Set aside.
  7. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat until very hot. Do not add oil to the pan.
  8. Place one rolled naan onto the hot, dry skillet. Cook for 1 to 2 minutes until bubbles form on the surface and the underside has brown spots.
  9. Flip the naan and cook the second side for about 1 minute until cooked through.
  10. Remove the cooked naan from the skillet and immediately brush the top generously with the garlic butter mixture.
  11. Repeat with the remaining dough pieces, stacking the finished naan and covering them lightly to keep them warm.

Notes

  • If you prefer plain naan, skip the garlic and cilantro mixture and brush only with melted butter.
  • For extra chewiness, let the dough rest for a second 15-minute proof after dividing and rolling.
  • If you do not have yeast, substitute 1 teaspoon baking powder and 1/2 teaspoon baking soda for the yeast, and skip the first rise time.
