Make crispy, fluffy corn fritters from scratch. This recipe delivers a satisfying texture perfect for a snack or side dish.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup melted butter, cooled slightly
  • 1 cup whole kernel corn, drained (canned or frozen/thawed)
  • 1/4 cup finely chopped onion (optional)
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
  2. In a separate small bowl, whisk the egg, milk, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
  4. Fold in the drained corn and chopped onion, if using.
  5. Heat about 1 inch of vegetable oil in a heavy-bottomed skillet over medium-high heat until it reaches 350 degrees Fahrenheit (175 degrees Celsius).
  6. Carefully drop rounded tablespoons of batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
  7. Fry for 2 to 3 minutes per side, until the fritters are golden brown and cooked through.
  8. Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. Serve immediately.

Notes

  • For a tangier flavor, add 1 tablespoon of buttermilk to the wet ingredients.
  • If you prefer cheesy corn fritters, add 1/4 cup of shredded sharp cheddar cheese to the batter.
  • To check oil temperature without a thermometer, drop a small piece of batter in; it should sizzle immediately and float to the top within a few seconds.
