Prepare the chicken coating: In one shallow dish, mix the flour, salt, pepper, paprika, garlic powder, and cayenne. In a second dish, place the beaten eggs. In a third dish, place the panko breadcrumbs.
Dredge each chicken cube first in the flour mixture, shaking off excess. Dip into the egg, letting excess drip off. Finally, press firmly into the panko breadcrumbs to coat completely.
Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
Arrange the coated chicken in a single layer in the air fryer basket, working in batches if necessary. Spray the tops of the chicken pieces lightly with cooking spray.
Air fry for 12 to 15 minutes, flipping the pieces halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
Prepare the sauce: While the chicken cooks, whisk together the sour cream, minced garlic, lime juice, olive oil, and salt in a small bowl until smooth.
Warm the tortillas according to package directions (you can warm them briefly in a dry skillet or microwave).
Assemble the tacos: Place the crispy chicken pieces into the warmed tortillas. Drizzle generously with the garlic lime crema and add your desired toppings.
Notes
For extra crispiness, chill the breaded chicken for 15 minutes before air frying.
If you do not have an air fryer, you can bake the chicken at 425°F (220°C) for 18-20 minutes, flipping once.
You can substitute Greek yogurt for sour cream in the sauce for a lighter option.
