Prepare a rich, flavorful one-pan chicken dinner featuring chicken breasts stuffed with a creamy spinach and ricotta mixture.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If stuffing, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. In a small bowl, mix the ricotta cheese, chopped spinach, Parmesan cheese, minced garlic, and sun-dried tomatoes (if using). Season lightly with salt and pepper.
  4. Stuff the ricotta mixture evenly into the pockets of the chicken breasts. Secure with toothpicks if necessary.
  5. Season the outside of the stuffed chicken breasts with salt and pepper.
  6. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned.
  7. Pour the chicken broth and heavy cream into the skillet around the chicken. Bring the liquid to a simmer.
  8. Transfer the skillet to the preheated oven. Bake for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Remove the skillet from the oven. Stir the pan juices to create a light sauce. Garnish with fresh parsley before serving.

Notes

  • For a thicker sauce, let the skillet rest uncovered for 5 minutes after removing it from the oven.
  • You can substitute frozen, thawed spinach for fresh, but squeeze out all excess moisture first.
  • Use toothpicks to hold the stuffing in place if the pockets open during cooking.
