Ingredients
Scale
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
5 ounces fresh spinach
1/2 teaspoon dried Italian seasoning
Salt and black pepper to taste
Instructions
Season both sides of the chicken breasts with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear the chicken breasts for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove chicken from the skillet and set aside.
Reduce heat to medium. Add minced garlic to the same skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
Reduce heat to low. Stir in Parmesan cheese until the sauce is smooth.
Add the fresh spinach to the sauce, stirring until it wilts completely, about 2-3 minutes.
Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken.
Simmer for 2 more minutes to heat the chicken through. Serve immediately.
Notes
For a thicker sauce, simmer the cream mixture for an extra 3-5 minutes before adding the cheese.
You can substitute half-and-half for heavy cream, but the sauce will be thinner.
Use fresh spinach for the best texture; frozen spinach requires thorough thawing and squeezing to remove excess water.
