Make this rich, creamy shrimp and mushroom Alfredo sauce entirely in one skillet for a fast weeknight dinner.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Pat the shrimp dry and season lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the shrimp and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  4. Add the remaining 2 tablespoons of butter to the same skillet. Add the sliced mushrooms and cook until they release their liquid and brown, about 5 to 7 minutes.
  5. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
  6. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  7. Reduce the heat to medium-low. Stir in the heavy cream, salt, pepper, and red pepper flakes if using. Bring the sauce to a gentle simmer.
  8. Remove the skillet from the heat. Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. Do not boil after adding cheese.
  9. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp and mushrooms in the sauce.
  10. Stir in the fresh parsley. Serve immediately directly from the skillet.

Notes

  • Serve this dish over cooked fettuccine or linguine if you prefer a pasta meal.
  • For a richer flavor, use dry white wine instead of chicken broth for deglazing the pan before adding the cream.
  • If the sauce thickens too much while serving, stir in a splash of milk or broth to reach your desired consistency.
