Make tender chicken with crispy edges coated in a rich, zesty lemon garlic cream sauce, all cooked in one skillet.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts or 6 thighs
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken pieces completely dry with paper towels. Season both sides with salt, pepper, and paprika.
  2. Heat the olive oil and butter in a large skillet over medium-high heat until the butter foams.
  3. Place the chicken in the hot skillet, ensuring not to overcrowd the pan. Sear for 4 to 5 minutes per side until golden brown and crispy edges form. Remove the chicken and set it aside on a plate.
  4. Reduce the heat to medium. Add the minced garlic to the remaining fat in the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 1 minute.
  6. Stir in the heavy cream, lemon juice, and lemon zest. Bring the sauce to a gentle simmer.
  7. Stir in the Parmesan cheese until the sauce thickens slightly. Taste and adjust seasoning if needed.
  8. Return the seared chicken to the skillet. Spoon the sauce over the chicken. Cook for 3 to 5 minutes, turning once, until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
  9. Remove the skillet from the heat. Garnish with fresh parsley before serving.

Notes

  • For the crispiest edges, ensure your skillet is very hot before adding the chicken and do not move the chicken until you flip it.
  • If the sauce seems too thin after adding the cream, simmer it for an extra minute or two before returning the chicken.
  • Serve this dish over pasta, rice, or with crusty bread to soak up the extra sauce.
