Ingredients
Scale
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
6 slices bacon, chopped
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 (16 ounce) package potato gnocchi
8 ounces cream cheese, cubed
1 packet (1 ounce) dry ranch seasoning mix
1 teaspoon dried Italian seasoning
1/2 teaspoon black pepper
1/4 teaspoon salt (adjust based on bacon saltiness)
2 cups fresh spinach
1/2 cup grated Parmesan cheese
Instructions
Cook the chopped bacon in a large pot or Dutch oven over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
Add the olive oil to the pot with the bacon grease. Add the diced onion and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Add the cubed chicken to the pot. Cook, stirring occasionally, until the chicken is browned on all sides, about 5 to 7 minutes.
Pour in the chicken broth. Bring the mixture to a simmer.
Stir in the dry ranch seasoning mix, Italian seasoning, pepper, and salt.
Add the potato gnocchi to the simmering broth. Cook according to package directions, usually about 3 to 5 minutes, until the gnocchi float to the top.
Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it melts completely and the sauce thickens and becomes smooth.
Stir in the fresh spinach until it wilts into the sauce.
Remove the pot from the heat. Stir in the grated Parmesan cheese until combined.
Serve immediately, topped with the reserved crispy bacon pieces.
Notes
For a thicker sauce, let the mixture simmer uncovered for an extra 5 minutes before adding the cream cheese.
You can substitute frozen spinach for fresh, but thaw it first and squeeze out excess water before adding.
If you prefer a spicier flavor, add 1/4 teaspoon of red pepper flakes with the seasonings.
