Ingredients
Scale
8 slices thick-cut brioche or challah bread
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup finely chopped fresh strawberries
2 large eggs
1/2 cup milk
1/4 teaspoon ground cinnamon
2 tablespoons butter, for cooking
Powdered sugar, for dusting
Maple syrup, for serving
Instructions
In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the chopped strawberries.
Take four slices of bread. Spread half of the cream cheese mixture evenly over one side of each slice. Top with the remaining four slices of bread to create four sandwiches. Press the edges lightly to seal.
In a shallow dish, whisk together the eggs, milk, and cinnamon until combined.
Dip each stuffed sandwich into the egg mixture, coating both sides quickly. Do not let the bread soak too long.
Heat a large skillet over medium heat and melt 1 tablespoon of butter. Place two sandwiches in the skillet. Cook for 3 to 4 minutes per side, until golden brown and heated through. Add more butter as needed for the second batch.
Remove the French toast from the skillet. Dust generously with powdered sugar and serve immediately with maple syrup.
Notes
For a crispier exterior, cook the stuffed toast slightly longer over medium-low heat.
You can substitute blueberries or raspberries for the strawberries in the filling.
Use thick-cut bread to prevent the filling from squeezing out during cooking.
