Make this hearty, one-pot creamy cowboy soup using ground beef, beans, and corn for a filling family dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium potatoes, peeled and diced
  • 1/2 cup heavy cream

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion softens, about 5 minutes.
  3. Stir in the diced tomatoes, black beans, kidney beans, corn, beef broth, oregano, chili powder, salt, and pepper.
  4. Add the diced potatoes to the mixture.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the potatoes are tender.
  6. Remove the lid and stir in the heavy cream. Heat through for 2 minutes, but do not boil after adding the cream.
  7. Serve hot.

Notes

  • For a thicker soup, mash about one cup of the potatoes against the side of the pot before adding the cream.
  • You can substitute frozen corn for canned corn if you prefer.
  • This soup freezes well for later meals.
