Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup shredded cheddar cheese, divided
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • 1 large egg
  • 1/3 cup milk

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish. Give yourself a pat on the back for getting started!
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain off any excess grease.
  3. Stir the cream of mushroom soup, Rotel, black beans, corn, and 1/2 cup of the cheddar cheese into the beef mixture. Mix well.
  4. Spread this savory beef mixture evenly into the bottom of your prepared baking dish.
  5. In a separate bowl, prepare the cornbread batter according to the Jiffy box directions, usually mixing the cornbread mix with the egg and milk. You are doing great!
  6. Pour the cornbread batter evenly over the top of the beef mixture.
  7. Bake for 25 to 30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the casserole from the oven. Sprinkle the remaining 1/2 cup of cheddar cheese over the hot cornbread topping. Let it sit for 5 minutes so the cheese melts.
  9. Slice and serve this hearty ground beef casserole immediately. You made a fantastic dinner!

Notes

  • For extra flavor in the beef layer, add 1 teaspoon of chili powder or cumin when browning the meat.
  • If you want a slightly sweeter cornbread topping, you can add 1 tablespoon of sugar to the Jiffy mix.
  • This recipe is a great option for a quick weeknight dinner idea because it comes together fast.
