Make a rich, single-serving brownie using cottage cheese for a protein boost. This fast microwave brownie recipe is perfect when you need a quick, satisfying chocolate snack.

Ingredients

Scale
  • 2 tablespoons cottage cheese (full fat or 2%)
  • 1 tablespoon cocoa powder (unsweetened)
  • 1 tablespoon almond flour or oat flour
  • 1 teaspoon maple syrup or preferred sweetener
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chocolate chips (optional)
  • 1 pinch baking powder

Instructions

  1. Select a microwave-safe mug or small ramekin. Lightly spray the inside if needed.
  2. Add the cottage cheese to the mug. Use a fork to mash it until it is as smooth as possible. This step helps prevent a grainy texture.
  3. Add the cocoa powder, flour, sweetener, vanilla extract, and baking powder to the mug.
  4. Mix all ingredients thoroughly until you have a smooth, thick batter. Scrape down the sides.
  5. Stir in the chocolate chips, if using.
  6. Microwave on high power for 45 to 75 seconds. Start checking at 45 seconds. The brownie is done when the top looks set but still slightly moist. Cooking time varies based on microwave wattage.
  7. Let the brownie cool in the mug for one minute before eating. Enjoy your fast chocolate snack!

Notes

  • For the best texture, use smooth cottage cheese or blend yours very well before mixing in dry ingredients.
  • If the brownie seems too dry after cooking, try reducing the microwave time by 5 to 10 seconds next time.
  • You can substitute cream cheese for cottage cheese for a different flavor profile, though the protein content will change.
  • This recipe is a great base for a low sugar microwave treat if you use a zero-calorie sweetener.
